Vanilla Peach Jam
Ingredients
250 grams dried peaches
2 cups sugar
4 cups water
1 tablespoon vanilla
sterilized jars

Method
- Soak dried peaches overnight in the water. (I would suggest chopping the peaches prior to soaking but is not necessary)
- Place peaches and water in a large saucepan and bring to the boil, allowing to boil for 15 minutes or until fruit is soft.
- Add sugar and vanilla.
- Simmer for 30 minutes to 1 hour, depending on the constancy desired.
- Bottle and store in the fridge.
