Vanilla Peach Jam

250 grams dried peaches
2 cups sugar
4 cups water
1 tablespoon vanilla

sterilized jars

  1. Soak dried peaches overnight in the water. (I would suggest chopping the peaches prior to soaking but is not necessary)
  2. Place peaches and water in a large saucepan and bring to the boil, allowing to boil for 15 minutes or until fruit is soft.
  3. Add sugar and vanilla.
  4. Simmer for 30 minutes to 1 hour, depending on the constancy desired.
  5. Bottle and store in the fridge.
Can be enjoyed with toast, plain yogurt, ice cream or as a dessert topping.
